The Spiny Lebbeid Shrimp or Spiny Lobster is translucent in colour, with brown or reddish-brown bands around the body. They grow very slowly and can grow up to a length of 11 centimetres but are normally around 5 centimetres in length. This slow growth period in the cold waters creates its smaller size, the natural environment gives the shrimp its firm texture and ‘fresh’, light-salty yet sweet taste.
The shrimps can be eaten both cold or as part of a hot dish. When using in a hot dish, make sure to add the shrimp at the end to avoid overcooking which affects the taste and consistency.
